(iv) Polau and Biriani: Polau and Biriani are the most common dishes in the rice categories of Old Dhaka. It is my most favorite food item. From very small party to large, everywhere people keep Polau or Biriani as their main dish. There are various types of Polau and Biriani in Old Dhaka, like Shahi Polau, Katchi Biriani, Morog Polau, Jafran Polau, Tehari etc.
Polau: It is very common food in Old Dhaka. In every occasion especially in Eid-Ul-Fitr and Eid-Ul-Azha it is eaten by almost all the people. The dishes of any marriage ceremony become incomplete without this food item. It is made with special rice called “Polau Chal”. The cooker use Polau rice, ghee, ginger pest, food color, salt, different spices like elachi, dar-chini etc to cook Polau. The main fact of cooking Polau is the measurement of water used to steam the rice. When Polau become ready to eat it spread a sweet smell that attracts people most. It is eaten especially with Chicken Rost or Rejala. As Polau is very much common in our Old Dhaka, it is available almost all the hotels and restaurant in this area. A single bowl of Polau will cost 50 to 500 Tk.
